Her Wicklow Adventure began 14 years ago when she set up a restaurant on her partner’s family Holiday Park, leaving the city for a small country village to join a family business. 'The Snug', a summer-only restaurant, went from strength to strength and they extended into a derelict building next door and purchased a full 7 day license from the only pub in the Village which had closed down.  Further expansion followed and they transformed the old shop next door into a high end restaurant. The pivotal turning point came with the awareness of the rising demand and interest in craft beer and locally produced products.   After much research they opened the doors of the 'Wicklow Brewery' in September 2014, which has ultimately led to Mickey Finn's becoming a destination pub.
